Sausage, Green Beans & White Rice
Tonight, I made a quick meal that was so delicious due to the quality of the sausage and the simplicity of the rest of the meal. Nothing beats good flavors with little effort!

Vermont Cheddar Sausage

French cut Green beans w/ Garlic & Onions
Store brand Frozen French cut green beans.
Store brand bag of peeled garlic.
Store brand frozen diced onions.
I keep the garlic in bag it came in, in the freezer. I pull out cloves as I need them. The same goes for the diced onions. Very convenient for when you have no fresh on hand.
White Rice
Instant White Rice w/ butter and salt and pepper.
My son always keeps instant rice in his pantry. So, because I was short on time, and in a rush, I used his. It needs nothing more than Nellie's butter and Real Salt Ancient Fine Sea Salt and store brand black pepper.
How to cook:
8 Sausages

Add sausage to a pot and cover with water. Bring to a boil and then simmer for 10 minutes.

2 T Butter
2 cloves garlic, chopped
3/4 C. diced onions

While the sausage is simmering, put butter in an iron skillet over med-medium high heat.
Add garlic, sauté for a few minutes.
Add onions. Sauté until it is not watery anymore.
Add the entire bag of frozen green beans and cook down until it is not watery, tossing every once in a while.
Take the sausage out of the water and place on top of the green beans and cover, while you make the minute rice. (Just dump out water and use same pot)

3 C water
3C Rice
3 T Butter
2 t salt

Put 3 cups of hot water to boil, add a couple T butter and salt to taste. (about 2 tsp) When water comes to a boil, add 3 cups of rice. Stir, turn down heat to simmer and cover for 10 minutes.


Quick, Delicious, Easy Meals: This meal cost about $4.12 per serving. I made 6 servings, which fed 2 men and myself, plus leftovers for me to eat at lunch tomorrow.
With even tighter strings, you could buy cheaper sausage (of any type you like), preferably the store brand, and plain bag of short grain white rice. This would bring your costs to below 4 per serving most definitely, and you would be eating healthy, getting full, and saving money! So great!
